Baked Polish Omlette - {Drachena}

Recipe Ingredients

1 packet  Scallions - sliced
1   Garlic clove - minced
1 tablespoon 15mlOlive oil
3 tablespoons 45mlRye flour
1 1/2 oz 42gMilk
2/3 cup 157mlSour cream
4   Eggs beaten
1 tablespoon 15mlChopped cilantro
1 tablespoon 15mlChopped flat-leaf parsley
2 tablespoons 30mlMelted butter
  Salt - to taste
  Freshly-ground black pepper - to taste
1 cup 146g / 5.1ozCooked chopped spinach
2   Red peppers - cut small dice
6 oz 170gCrumbled feta cheese

Recipe Instructions

Preheat oven to 350 degrees. Saute scallions and garlic in oil and place on the bottom of an oiled 8-inch casserole.

Mix flour, milk, sour cream and eggs and herbs, butter and seasoning. Place vegetables in casserole. Pour egg mixture on top and cover with crumbled feta. Bake 40 to 45 minutes.
